I spent all this morning working in my office. After work I had several errands to do so I didn’t get home for lunch until nearly 2:30. I was starving, but didn’t want to eat just anything. I wanted to choose something a little healthy, filling, & quick. I saw an idea a couple of months ago on a blog for making a pizza with a tortilla crust. I have been loving these ever since! You can put absolutely any toppings on it, but I tend to choose veggie toppings with a little feta cheese on top. When I make it for the kids, they prefer pepperoni & mozzarella cheese. You can do absolutely anything! This is great for a quick lunch or snack!
Tortilla Pizza
Ingredients:
- 1 flour tortilla (any size you like)
- Spaghetti or pizza sauce (to taste)
- Any pizza toppings you like (I always use red onion, peppers, & green olives, diced)
- Cheese to taste (I like Feta)
- Cooking Spray
Directions:
Spray bottom of the tortilla with cooking spray.
Spoon sauce onto top of tortilla.
Add toppings.
Add cheese.
Bake in a preheated 375°F oven for approximately 8 minutes or until the edges of the tortilla are becoming slightly browned.
